Ingredients

2 large organic free-range eggs

1 handful fresh organic spinach (about 1 cup)

For the Plate
2 ounces organic baked turkey breast, sliced
½ organic avocado, sliced
1 handful organic mixed berries:
Blueberries
Raspberries
Blackberries
Strawberries
Instructions
Heat the avocado oil in a small skillet over medium heat.
Crack the eggs into a bowl and whisk until well combined.
Pour the eggs into the skillet and cook, stirring gently.
When the eggs begin to set, add the fresh spinach and continue stirring until the spinach is wilted and the eggs are fully cooked.
